The meandering Jhelum. The stunning shikaras bobbing up and down the Dal Lake. The rustle of Chinar leaves that get underfoot as you take a walk in autumnal Kashmir. All potent imagery to transport you to the paradisiacal land that so deserves peace to fall on it. But I’d be doing a great disservice to Kashmir, if I left out its delectable cuisine that is as finely nuanced as it is beautiful to look at. Plump mounds of pounded meat that go into the delectable and subtly spiced gushtaba. Fluffy rice grains that enrobe succulent pieces of lamb that form the yakhni pulao. And that unmistakable flavor of the saffron-enhanced dum aloo.
And as much as I would like to be in the thick of things and tuck into the aforementioned goodies in Kashmir, I will have to make do with a visit to some of the city’s Kashmiri restaurants. And here is my pick of two such culinary gems…

Poush
What? As one of the first Kashmiri restaurants in the city, Poush is a celebration of all things Kashmiri right from its shikara-style seating to its walls covered in Kashmiri carpets. But the food trumps all here. Start with the nadier churma made from lotus stems and kabargah lamb ribs and then graduate to mains like methi chaman, rista also made from pounded lamb, yakhni pulao and the ruwangan kokur that is a fried chicken in tomato gravy dish. But a few more Kashmiri desserts (other than a firni and a shufta) would have made it a truly heavenly experience.
Best for? Undoubtedly the star here is the goshtaba that makes you fall in love with it the minute you see it!
How much? Rs 1,250 for two without alcohol and taxes

Rogan Josh

Khanabadhosh
What? This modest Kharghar-based restaurant is one of those places that beg you to not ‘judge a book by its cover’. Yes, although nothing much to look at; Khanabadhosh packs a mighty punch with the food on offer here. From the Pashtuni murgh tikka to the Kashmiri pulao, a truly yummy Kashmiri feat awaits you. But sadly, they don’t seem to stick to serving only Kashmiri food and you will find the menu overrun with ‘other’ dishes like the ubiquitous Mughlai and even a few Goan dishes. Go figure…
Best for? The melt-in-the-mouth mutton rogan josh. Don’t miss it!
How much? Rs 850 for two without alcohol and taxes
Where? 7 & 38, Green Heritage Building, Sector 20, Kharghar. Call, 022 27744748, +91 8097003925
